February 8 2018
A former paper mill in Guardbridge, location of the University of St Andrews’ satellite Eden Campus, is to be transformed into a £4m distillery and brewery.Eden Mill are spearheading the plans in order to increase production of gin, beer and whisky from their existing base just metres away, while also providing a new visitor centre, café/bar, shop, presentation room and a top floor tasting area overlooking the surrounding estuary.
Paul Miller, co-founder of Eden Mill, commented: “To stay competitive, the spirits industry in Scotland needs to embrace new ideas and experimentation while respecting its heritage and traditions, particularly with whisky. At this new site, Eden Mill will be in the perfect position to invest in new products and lead the way with innovation.”
Subject to approval from Fife Council the Opfer Logan Architects designed scheme could be on site by the summer and operational by autumn 2018.
